# Expert Tips:

01 -
  • The grapefruit brings this incredible brightness that lemon bars just cant match
  • They strike that perfect balance where your tastebuds cant decide between sweet and tart
  • The buttery crust grounds all that citrusy intensity into something completely comforting
02 -
  • Pouring filling onto hot crust is weird but essential, it creates that seamless layer between crust and custard
  • The center should barely jiggle when you pull them out, residual heat finishes the cooking as they cool
  • Cutting them before they are completely cooled will end in tears and messy bars
03 -
  • Use a microplane for the zest to avoid getting any bitter white pith in your bars
  • Run your knife under hot water and wipe it dry between cuts for perfectly clean slices
