01 - Preheat oven to 425°F. Line a baking sheet with parchment paper for easy cleanup.
02 - Place trimmed and halved Brussels sprouts in a large bowl. Drizzle with olive oil, then add kosher salt, black pepper, and garlic powder. Toss until evenly coated.
03 - Spread seasoned Brussels sprouts across the prepared baking sheet in a single layer. Scatter diced beef bacon evenly over the top.
04 - Roast for 20–25 minutes, stirring halfway through cooking. Cook until Brussels sprouts are golden brown and tender, and beef bacon is crispy.
05 - Remove from oven and transfer to a serving dish. Sprinkle with fresh parsley and grated Parmesan cheese if desired. Serve immediately while hot.
