12 - 1 teaspoon salt
13 - ½ teaspoon black pepper

→ Serving & Toppings

14 - 1 cup shredded lettuce
15 - 1 medium tomato, diced
16 - 1 small red onion, thinly sliced
17 - ½ cup Greek yogurt or high-protein yogurt
18 - Fresh parsley or cilantro, optional

# How To Make:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Combine cottage cheese, eggs, flour, salt, baking powder, garlic powder, and oregano in a blender. Process until completely smooth and creamy.
03 - Pour batter onto prepared tray, spreading into four even circles approximately 7 inches in diameter. Bake for 18-20 minutes until edges turn golden brown and flatbreads feel set and lightly crisp. Remove and set aside.
04 - Slice chicken breasts into even strips. Place in a bowl and coat thoroughly with olive oil, smoked paprika, ground cumin, salt, and black pepper.
05 - Heat skillet over medium-high heat. Add seasoned chicken strips and cook for 4-5 minutes per side until golden brown and cooked through. Remove from heat.
06 - Place one flatbread on a plate. Layer shredded lettuce, diced tomato, sliced red onion, and cooked chicken strips down the center. Drizzle with Greek yogurt and sprinkle with fresh herbs if using.
07 - Fold in sides and roll tightly into a wrap. Cut in half diagonally and serve immediately while flatbread remains warm and crispy.

# Expert Tips:

01 -
  • You get 36 grams of protein per wrap while eating something that actually satisfies your crispy carb cravings
  • The flatbread batter comes together in literally two minutes in a blender
  • These reheat beautifully so you can make a batch and eat like royalty all week
02 -
  • The batter looks way too thin but trust the process it sets beautifully
  • Let the flatbreads cool slightly before assembling or they might tear
  • Dont overcrowd your pan when cooking the chicken or youll steam instead of sear
03 -
  • Use a scale to measure your flour since too much makes the flatbread dense
  • Let the blended batter sit for 10 minutes before spreading for even better texture
