Cucumber Herb Cream Cheese (Print)

Refreshing finger sandwiches featuring cucumber and a creamy herbed cheese spread.

# What You’ll Need:

→ Herb Cream Cheese

01 - 8 oz cream cheese, softened
02 - 2 tbsp fresh chives, finely chopped
03 - 1 tbsp fresh dill, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - 1/4 tsp garlic powder
07 - Salt and freshly ground black pepper, to taste

→ Sandwiches

08 - 1 English cucumber, thinly sliced
09 - 12 slices white sandwich bread, crusts removed
10 - 2 tbsp unsalted butter, softened (optional)

# How To Make:

01 - Combine cream cheese, chives, dill, parsley, lemon juice, garlic powder, salt, and pepper in a bowl. Mix until smooth and well blended.
02 - Lay out bread slices. Optionally spread a thin layer of butter on each slice to prevent sogginess.
03 - Evenly spread the herb cream cheese mixture onto each slice of bread.
04 - Arrange cucumber slices over half of the bread slices, slightly overlapping.
05 - Top with remaining bread slices, cream cheese side down, to form sandwiches.
06 - Gently press each sandwich and trim crusts if not already removed. Cut each sandwich into quarters (rectangles or triangles) for serving.

# Expert Tips:

01 -
  • The herb cream cheese comes together in minutes but tastes like something from a fancy tea room
  • These sandwiches stay remarkably fresh, making them perfect for preparing ahead of guests arrive
02 -
  • The butter layer seems unnecessary until you serve these two hours later and the bread is still perfectly fresh
  • Cut these right before serving because the exposed cucumber edges can dry out if they sit too long
03 -
  • Use a vegetable peeler to strip away stripes of cucumber skin for a beautiful presentation
  • Let the assembled sandwiches rest for 10 minutes before cutting so everything settles
